A report from chess.com about cheating is now available. This report appears to have been issued in response to the reporting in the media. Another article (About Online Chess Cheating) from chess.com discusses a bit more about their methods, though it is still very vague. It goes beyond accuracy (from what I gathered, how many times players move matches a bot of the same player level), because if an opponent makes a mistake early, sometimes the best move is easy for rookie players to find.
The article points to other third-party for cheat detection (GitHub - MGleason1/PGN-Spy: Chess game analyser for detection of cheating)... might be a good place to start for those looking to dive into the topic more.
There is also more sophisticated cheating software based on AI, which tries to emulate "human" play to evade cheating software (one example: Maia Chess)
